Winter savory (Satureja montana) is a hardy, perennial Mediterranean herb with a robust, peppery, pine‑like flavor, used both in cooking and traditional medicine.

Winter savory is a perennial, semi‑evergreen herb in the mint family (Lamiaceae). It is native to southern Europe, the Mediterranean, and parts of Africa, thriving in rocky, calcareous soils and sunny slopes.  

It grows 10–40 cm tall, with dark green, leathery leaves and pale lavender to white flowers that bloom from July to October.

Its aroma is earthy, peppery, with hints of sage and pine, stronger and more intense than summer savory.
